Favourite place to eat in Adelaide?
Africola or Golden Boy
Favourite cut of meat ?
Beef Cheek. It’s amazing how different the product is after it is cooked properly, compared with what it is to start off with.
Favourite drink ?
Margarita, no contest. Easily my favourite.
Favourite chef joke / pun ?
I’m just a sarcastic F@#k. (other chef laughs in agreement)
What do you like to do in your spare time?
Music. I like to mix records, mainly funk and hip hop. (We begin to breakdance in the kitchen)
Where did you learn to cook?
Cullinary Institute of America in New York, and did my apprenticeship in Mexico.
What keeps you motivated and inspired?
